Bring butter to room temperature and divide into 85g and 40g lots.
Place coconut into a pan and slowly toast it until golden brown. Be careful as the coconut can burn very quickly. I learned this the hard way. Set aside to cool.
Using the 40g lot of butter, place in a pan and melt on a very low heat. When melted, add the chai spice mix (and your sweetener, if using one) and stir until combined. Do not let the butter burn away. When combined, add in 1/2 a cup of the toasted coconut and stir thoroughly until well combined. Set aside to cool.
In a bowl, place the remaining 1/2 cup of toasted coconut, the cardamom, cinnamon, chia seeds, pumpkin seeds, and sunflower seeds and mix thoroughly.
Add the remaining 85g of butter to the dry ingredients and rub together until well combined and you're able to form balls. Note: the mix may be very loose.
Place the mixture in the refrigerator for 30-60 minutes until firm enough to form balls when rolled. Make sure you check after 30 minutes and at 45 minutes to make sure the mix isn't too hard to form balls.
When the mixture is ready, roll mixture in hands to form 10 balls and then roll each ball into the cooled coconut chai mixture. You may need to press the mixture into the balls slightly to make sure they are well covered.
Place in the refrigerator for 60 minutes before serving and store them in there for up to a week or in the freezer for up to 6 months. Enjoy!
Notes
Ground Chai Tea: For this, I had a bag of organic chai tea that I use to brew a delicious keto chai tea and I put what I need into a nutri-bullet and processed it until it became a fine powder. You can also make up your own chai tea blend using the common spices found in chai but you can add in how much of each one you like and less of the ones you don't. I like a little less cloves than the premixed bag I buy so I sometimes make my own blend.Optional: You could add sweetener to this if you like by just adding erythritol or powdered stevia to the external coconut chai blend.
