INGREDIENTS
* 2 1/2 cups Pecan halves
* 3/4 cup Granular Sweetener (My favorite brand on Amazon https://amzn.to/2D8OmNj (affiliate link)
* 1 teaspoon cinnamon
* 1 teaspoon salt
* 1 egg white, beaten until frothy

INSTRUCTIONS
* Preheat oven to 250F.
* Line a 9×13 sheet pan with parchment paper or a silicone baking mat.
* In a mixing bowl, mix together the pecan halves and the egg white.
* In another large bowl, mix together the sweetener, cinnamon and salt. Add in the pecan halves and the egg white and mix well to coat the pecans.
* Lay the pecans out on the baking sheet in a single layer.
* Bake in the oven for 1 hour, stirring every 15 minutes. The pecans will brown and get crunchy.

INGREDIENTS
1 cup almond flour (My favorite brand on Amazon https://amzn.to/2Nw5aDK (affiliate link)
1 cup pecans, finely chopped
5 tablespoons Powdered Sweetener (My favorite brand on Amazon https://amzn.to/2Dm9xM9 (affiliate link)
1 stick butter, melted
1 teaspoon Vanilla
1 cup powdered sweetener for coating the cookies

INSTRUCTIONS
Combine the almond flour, pecans, 5 tablespoons of powdered sweetener, melted butter and vanilla in a large mixing bowl. The mixture will be crumbly but it should hold together when pressed between 2 fingers.
Roll the dough into 1 tablespoon balls and set aside on a plate. Place the cookies in the refrigerator for 30 minutes.
Preheat the oven to 350F and line a 9×13 sheet tray with parchment paper or a silicone mat.
Place the cookies on the tray and bake in the oven for 10 minutes.
Remove from the oven and let the cookies cool for 10 minutes.
Place the 1 cup of powdered sugar in a shallow bowl and roll each cookie in the powdered sweetener. Repeat this step 2-3 times until the cookies have a nice coating.
Keep the cookies in an airtight container for up to 1 week.

NUT FREE KETO SNOWBALL COOKIES: Sunflower seed flour is your best option. Use it as a 1 for 1 substitute for almond flour.
