Only 3 ingredients needed for this easy crock pot pork loin. Make it shredded in the slow cooker with BBQ sauce. Low carb and keto friendly!

INGREDIENTS
3-5 pound Pork loin

BBQ Sauce (My favorite brand on Amazon https://amzn.to/2YOvlIA (affiliate link)

EQUIPMENT
Slow Cooker (My favorite brand on Amazon https://amzn.to/2QI7NEu (affiliate link)

INSTRUCTIONS
Place the pork loin in the crock pot and cover with BBQ rub and rub into the pork. Flip to the other side and repeat. Place the crockpot lid and cook on high for 4 hours or low for 8 hours.
When finished cooking, shred the pork directly in the crock pot. Top with BBQ sauce and serve.

JENNIFER’S TIPS
A 3 ounce portion of pork loin (without seasoning) is: 206 calories / 12g fat / 4.4g sat fat / 0 carbs / 23g protein

Nutrition will vary depending on the brand of rub and BBQ sauce you use.

Most pork loins are around 5 pounds so I like to make the pulled pork and then freeze half of it for future recipes. You can freeze it for up to 6 months in a freezer safe container.

INSTRUCTIONS
Add all ingredients to a large bowl and mix well.
Adjust seasonings to taste.

JENNIFER’S TIPS
You can use pre-shredded cabbage from a bag or you can buy a head of cabbage and shred it yourself.
Taste for seasonings: If you find it tastes too mayonnaise, add more pickle juice or you could add vinegar if you like.
